So there are tons of recipes out there for the all-time party favourite, but here’s our version… and don’t forget to check out some mean as avocado tips at the bottom of the post!
Note: This is just a guide, so it’s best to check and alter the taste to your liking!
2 large, ripe avocados
1/2 a red onion, finely chopped
1 clove of garlic, finely chopped
1 tomato, finely chopped
Cilantro, chopped and for garnish
2 teaspoons of lemon/lime juice
1 tablespoon jalapeno chiles, chopped
2 tablespoons of sour cream
Salt and pepper, to taste
Well, this part it easy. Scoop out the avocado flesh with a spoon (bottom of post for tips on how to do this the fun way 😉 ) and put it all in a bowl and mix it with a fork, but don’t over mash the mixture-it’s not a paste. It’s all done now-serve chilled with tortillas or corn chips, garnish with cilantro, accompanied by some salsa. YUM!
-BUYING AN AVOCADO- A ripe avocado will leave a dent when you gently press it with your finger, an over-ripe one will simply collapse under your finger. Another is to pick the button of the avocado, and if it moves then it’s just right, if it doesn’t budge it’s under ripe.
– CUTTING AN AVOCADO- Grip the avocado gently on one side with one hand. With a large, sharp knife in the other hand, cut the avocado lengthwise around the seed. Open the two halves to expose the pit. There are a few ways you can proceed to remove the pit from the avocado half that has the pit. One way is to make another cut, lengthwise on the avocado half that has the pit, cutting around the pit, exposing it so that it is easier to remove. You can also use a spoon to scoop out the pit. Another method is a bit tricky, as you’ll see. This method is very popular, but you must be careful lest you cut your hand. For safety, fold up a kitchen towel and use that to hold the avocado half with the pit. Gently tap the pit with a knife with enough force so that the knife edge wedges into the pit, but not so hard as to cut all the way through it.
-THE PIT- You can do two things with an avocado pit. One is to put it in with the guacamole-it will keep the dip green (don’t ask how, because I don’t know, I just do it and it works) and the other is to grow it. It’s extremely easy to grow (not to mention super fun) and it will grow HUGE! So here’s how you do it:
Push three toothpicks in each avocado about a 1/3 of the way from the bottom (large end of the pit).
Suspend the avocado over a glass (the toothpicks will hold it up). The pit should be in 1/2 inch or so of water. Keep the level constant by adding water as needed. DON’T change the water.
First, small roots appear on the bottom side, then the pit cracks and you can see the developing stem. There may be more than one stem and these should always be left alone. When the stem reaches 6 inches, cut it back to 3 inches; this induces a bushy leafy plant.
Plant them after about 2 1/2 weeks. Remove or break toothpicks off before planting. The upper portion of the seed must be exposed to allow new stems to grow so don’t bury it all the way under the ground. The avocado should be potted in a large clay pot in a light sandy soil mixture. Avocado plants need good light, but not too much direct sunlight. Let the plants dry out between watering. Over watered plants will begin to wilt and shed dried leaves (which leads a lot of people to think they need MORE water which kills them even faster).
